One question I have for the techies among us is: is there a way to run these gen AIs in our own machines and with configurable restrictions?
Because there's only so much that can be done with the AI provided as it is. The companies are in control

The short answer is no for the average consumer. First this model and others of its power are not available open source yet. Then the models which are available require some serious horsepower to run. So I know there are some on this board which have successfully run their own AI service but that requires some dedication.

On a Mac you can use a program called DrawThings. On PC, I don't know.
There ought to be something, as I have had other people ask about this. But we never found anything quite like it.

Sora is good, but it's too expensive to use as a hobby.

For now SORA 2 video are only 8 to 10 seconds which is fine for splicing scenes together for a short movie. Give a year & we might be at a minute or longer.
